There are two reasons for this. Firstly a digital recording is merely a sample of a waveform, so there's bits missing. Secondly the machines and tape used to record impart unique characteristics onto the recording, which are just pleasing to the human ear. Without these digital recordings can sound a bit flat and clinical.
